Sanjay Dutta has joined Third Wave Coffee as Chief Technology Officer (CTO), bringing more than 25 years of experience across enterprise technology, IT operations, digital transformation and technology leadership.
Dutta has worked extensively across the QSR, restaurant, retail and consumer sectors, with experience in building technology systems that support business expansion and operational scale.
He joins Third Wave Coffee from Theobroma Foods, where he served as CTO. During his tenure, he led a multi-year enterprise technology transformation covering enterprise systems, central kitchen optimisation, CRM, cloud architecture and digital ecosystems. His responsibilities also included enterprise data strategy, AI and IT governance.
Before Theobroma, Dutta spent nearly 2 years as an independent technology consultant, providing CTO-level strategic advisory to organisations across restaurants, supply chains and retail.
Earlier, he was Vice President – Technology at Gourmet Investments, working across brands including PizzaExpress, Chili’s, Ministry of Crab and Typhoon Shelter. He led initiatives covering IT governance, ERP modernisation, omnichannel capabilities and digital ordering.
Dutta previously served as Head of IT – KFC & Pizza Hut at Sapphire Foods India, where he led enterprise IT consolidation as multiple franchise entities were brought onto a unified platform covering more than 450 stores. His work included SAP S/4HANA transformation, cloud modernisation, payment ecosystem integration and IT governance.
A significant part of his career was spent with McDonald’s India – North and East, where he worked for more than 8 years and served as General Manager – IT. He led enterprise technology strategy during a period of restaurant expansion, with responsibilities spanning digital ordering, integrated payments, IT standardisation and customer-facing technology.
Before McDonald’s, Dutta headed regional IT operations at Mitsui & Co. India, supporting infrastructure, governance and internal controls across Southwest Asia.
Earlier, he worked with Jaquar & Company, helping build enterprise IT capabilities across India and the UAE while supporting ERP and manufacturing technology transformation. His earlier technology roles included Shiv-Vani Oil & Gas Exploration Services and U.P. Airways.
At Third Wave Coffee, Dutta will bring together his experience across enterprise systems, infrastructure and digital transformation to support the brand’s next phase of technology-led scale, digital capability development and operational growth.
